No Bake S'mores Cheesecake (RECIPE)

On August 12, 2024, Nash Roe and Chef Paul Wahlberg of "Wahlburgers" were in The Kitchen at the Iowa State Fair preparing a no bake s'mores cheesecake!

NO BAKE S'MORES CHEESECAKE


Graham Cracker Crust

  • 2 cups graham cracker crumbs

  • 2 TBSP brown sugar

  • 1/2 cups butter (melted)

  • Pinch of salt


S'mores Cheesecake Filling

  • 16 ounces cream cheese (softened)

  • 7 ounces marshmallow creme

  • 1 cup powdered sugar

  • 4 ounces whipped topping


Chocolate Ganache

  • ~1/2 cups milk chocolate chips

  • ~1/3 cup heavy cream

*ganache is made by preference. For a thicker ganache, add more chocolate chips. For a thinner, add more heavy cream. Please use heavy cream as regular whole milk can make chocolate milk very fast.


Toppings (optional)

  • 3/4 cup mini marshmallows

  • 1/2 cups whipped topping

  • 2 TBSP graham cracker crumbs


Instructions


Graham Cracker Crust

  • Combine the graham cracker crumbs, brown sugar, and melted butter into a bowl and mix together until everything is well combined. You can test to see if you crust is ready by taking some in your hand and squeezing. If the mixture stays clumped together, your crust is ready! Pour the mixture into an 9x9 square dish, pressing firmly into the bottom and slightly up the sides of the pan. Refrigerate/freeze. until the filling is ready.

S'mores Cheesecake Filling

  • Mix together the softened cream cheese and marshmallow creme until creamy using a hand held (or stand mixer). Add the powdered sugar and mix until combined (this mixture will be sticky in the beginning!) Lastly, fold the whipped topping into the cream cheese mixture until incorporated.

  • Pour the cheesecake filling into the chilled crust and spread out into an even layer. Refrigerate for 4 hours - overnight (preferred)


Cheesecake Assembly

  • Right before the cheesecake is ready to service, make the ganache. Combine the milk chocolate chips and heavy cream into a liquid measuring cup. Microwave for 20-30 seconds, remove and whisk. Continue in 10 seconds increments until the mixture is velvety smooth. If you feel like the mixture is too thin, add additional chocolate chips, If you feel the mixture is to thick, add additional heavy cream.

  • Remove the cheesecake from the fridge and pour the ganache over top and use an offset spatula or spoon to spread the mixture evenly across the top.

  • Add additional whipped topping, marshmallows, mini chocolate chips, chocolate dipped graham crackers, or whatever you would like! Remember, this is YOUR cheesecake so decorate it however you want and enjoy!
